GlenAllachie drams and Pedro Ximénez casks are a match made in heaven
Tonight’s dram takes me (virtually) to one of my favorite distillers in all of Scotland, GlenAllachie, for their 8th batch of cask strength single malt, finished in my favorite casks: Pedro Ximénez and Oloroso Sherry casks. It opens with bold apricots, cherries, honey, and spicy cinnamon, followed by dark chocolate, juicy red apples, heavily charred oak, orange peel, and sharp ginger, then molasses, espresso coffee, vanilla, black pepper, and just a hint of liquorice. This is not a dram for the faint of heart, nor the novice – it is bold, uber complex and exploding with flavors, and demands/deserves savoring. The oily full-mouthfeel and thick-clingy legs deliver a spicy, more-than-full-flavored finish that continues to evolve flavors minutes into the finish. GlenAllachie drams and Pedro Ximénez casks are a match made in heaven. Drink slow, drink long, drink a variety, drink often.
