The Fableist 426 Albariño Central Coast 2025 750ml, named for “The Fox and the Stork,” is a 100% Albariño from California’s Central Coast. Fruit comes from the Morro View, Evenson, Paso Ono, and Lauchland vineyards. Whole clusters went directly to press; the juice was cold-crashed, racked off heavy solids, then fermented and aged entirely in stainless steel. The winery kept the wine cold to preserve naturally dissolved carbon dioxide and a delicate spritz. This 2025 vintage is bottled at 12.9% ABV / 25.8 proof in a single 750ml bottle.
The producer’s 2025 technical sheet describes fresh ginger and apricot blossom, followed by Honeycrisp apple and Meyer lemon. A cantaloupe note gives the mid-palate a rounder impression, while honeysuckle and the wine’s gentle effervescence keep the profile light and fresh.
