The Fableist 067 Tempranillo Central Coast 2023 750ml, subtitled The Two Travelers and the Axe, is a Central Coast red made from 100% Tempranillo and bottled at 14.2% ABV. The 2023 blend draws from the Dead End, Ing, Templeton Preserve, and Evensen vineyard sites. Fruit was fully destemmed, fermented in stainless steel with native yeast, and given one pump-over daily. After three weeks on the skins, the wine was pressed to barrel for naturally occurring malolactic fermentation.
Elevage combines 15% new American oak with 85% neutral oak, preserving the varietal character while adding measured structure. The winery describes blueberry cobbler, 90% cacao, and marzipan, joined by mesquite barbecue and dried oregano on the nose. A velvety mouthfeel leads into a warm, lingering finish.
