San Marzano F Negroamaro Salento 2021 750ml is a single-varietal Negroamaro from old bush vines in the Monte La Conca district of Salento, Puglia. Slightly overripe grapes are harvested by hand, destemmed and crushed, then cold-soaked for 24–48 hours before a temperature-controlled fermentation with indigenous yeasts. After malolactic fermentation in stainless steel, the wine matures for 12 months in French and Caucasian oak barrels. This 2021 release is bottled in a single 750ml format at 14.5% ABV / 29 proof.
The producer describes a very deep purple-red color and a broad, complex nose shaped by spice, soft dark fruit and cherry jam. The palate is full-bodied yet balanced, with fine tannins and a long, persistent finish. Its concentration reflects the warm Salento growing area, while the calcareous subsoil and iron-rich red topsoil form part of the wine’s exact vineyard context. The structured fruit and oak maturation make it a natural match for savory first courses, red meats, game or aged cheese.
