Riazul hand-selects mature agave, steam-cooks quartered piñas, extracts the juice with roller mills, and ferments it in open-air tanks with natural yeast. After double distillation, this añejo spends more than one year in American oak before filtration removes the color while retaining the character developed during maturation.
