High West Bottled in Bond Straight Rye Whiskey is made from an 80% rye and 20% malted rye mash bill at High West. The bonded designation identifies one base spirit made by one distiller at one distillery in a single distilling season, aged for at least four years in a federally bonded warehouse, and bottled at 50% ABV / 100 proof. This 750 mL release places High West’s pot-distilled rye at the center of the bottle rather than presenting it as part of a multi-distillery blend.
High West describes aromas of Luxardo cherry, fresh lime, churros, chocolate-chip cookie dough, apple pie, and leather. The palate brings chocolate-orange sticks, ripe watermelon, lemon peel, baked goods, creamy toffee, and oak, followed by orange and cool mint on the finish. The distillery also identifies the whiskey as non-chill-filtered with no flavor added. Enjoy it neat to follow the rye’s fruit, pastry, spice, and oak progression, or add a measured splash of water.
