High West Bottled in Bond Straight Bourbon Whiskey is a high-rye bourbon distilled at High West in Utah during one defined distilling season. The distillery identifies this single-vintage release as aged for four years and five months before bottling at the bonded standard of 50% ABV / 100 proof. Presented in a 750 mL bottle, it pairs the structure of charred oak with the concentration expected from a bonded American whiskey.
High West’s sensory notes open with Honeycrisp apple, golden raisins, kumquat zest, wildflower honey, graham-cracker crust, malted milk chocolate, and toasted oak spice. The palate moves through peach and cherry cobbler, gingersnaps, roasted marshmallow, puffed wheat cereal, cocoa nibs, molasses, dried thyme, and charred barrel staves. A finish reminiscent of almond and brown-butter cakes closes the pour. High West recommends serving it neat or with a splash of water to open its fruit, cocoa, and toasted-oak layers.
