Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; mid-summer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky. These six first fill ex bourbon barrels that make up this bottling were distilled and filled in November 2007.
On the nose there is freshly baked apple pie, made with the green granny smith type apples. Madeira cake and almonds or marzipan. Over time the marzipan tends to dominate. The addition of water brings out more fruitiness. The finish is long and dry with oak and citrus peel.
