Cutwater Mezcal Añejo 750ml is made in Durango, Mexico from wild Maguey Cenizo, or Agave durangensis, and bottled at 45% ABV / 90 proof. Cutwater roasts the agave in traditional volcanic-rock pit ovens, then allows open fermentation so local wild yeasts can inoculate the agave mosto. The spirit is distilled in Durango before entering Cutwater whiskey barrels sent from the company’s San Diego distillery.
After more than one year in barrel, the aged mezcal brings together smoke from pit cooking, deep agave character, and the vanilla and oak developed during maturation. The exact 750ml package is labeled Añejo and shows the Durango designation, 45% alcohol by volume, and the complete Cutwater bottle presentation. Its long barrel rest distinguishes it from the producer’s Joven and Reposado expressions while keeping the Cenizo agave and traditional cooking method at the center of the profile. Pour it neat or over one large cube to focus on the balance of smoke, agave, vanilla, and oak.
