Casadei Filare 18 Cabernet Franc 2021 is a Toscana IGT red made from 100% Cabernet Franc at Tenuta Casadei in Tuscany. The estate's exact 2021 technical sheet confirms the 750ml bottle and 14% ABV / 28 proof. Grapes planted in 1999 are harvested by hand and selected in the vineyard, then chilled for 24 hours before destemming and gentle crushing. Spontaneous fermentation and 30 days of maceration take place in buried 10-hectoliter terracotta amphorae.
After fermentation, Filare 18 ages for 18 to 20 months in new French oak barriques. The producer describes an aromatic meeting of fruit and spice, followed by a warm, enveloping palate. Mineral character and fresh acidity balance the wine's velvety tannins, giving the structured Cabernet Franc lift as well as depth. Tenuta Casadei recommends serving it at 16°C in summer or 18°C in winter, with aged cheeses or grilled and roasted red meats.
