Batanga describes hand-harvested agave hearts cooked in masonry brick ovens before fermentation and double distillation. The clear blanco expression puts agave at the center. Its name recalls the Batanga cocktail associated with La Capilla in Tequila, a simple combination of tequila, cola, lime and a salted rim.
